We're open flame people and we like the taste of smoke on our food. Modern gas 'ques do a good job of vaporizing drippings, but there's still nothing like the flavor bestowed by smoldering wood. You can go low-tech with chips wrapped in aluminum foil or give up a little grill real estate for a smoker box. Here are a few tips to help you along in your quest for the ultimate outdoor essence.
Holy Smoke
In our (very unscientific) experiments, we found that light, wispy smoke imparts the best flavor on our favorite produce and proteins - the heavier smoke clouds seem to create a result that's a little overwhelming. Remember, every type of wood offers something different and our opinion shouldn't prevent you from experimenting - play around & see what works for you.

The Hardware
The cast iron smoker box is our favorite because it seems to be inclined toward creating our favorite smoke wisps. It has a heavy, solid bottom and no side vents, so it has to spend about 15 minutes on the cooking grate before it begins to cough up smoke. Since it's cast iron, it needs a little more attention than stainless boxes to prevent rust - but we think it's worth the effort.
This stainless smoker box has its advantages & is worth checking out, too. It's almost 4" wide - which means tons of surface area and room for chips. Its lighter weight and vented bottom mean shorter heating times and heavier clouds of smoke - If that's your goal, this is your smoker. jalapeno tray
The Software
There are countless theories on which wood should be used based on what type of food you're cooking. We love hickory and mesquite with everything, and cedar & salmon are a match made in heaven, but it's fun to experiment with different wood/food combos. What you soak your chips in - if you soak them at all - changes the profile, too. Play around & you'll have your go-to smoke figured out in no time.
